After honing his craft in leading Parisian restaurants, Bastien returned to the South of France a few years ago. There, he develops his own expression of Mediterranean cuisine, with ingredients taking centre stage. Through bold pairings, contrasting textures and pared-back presentation, his cooking explores new flavours while preserving the simplicity and generosity of the Mediterranean terroir.
